Place water, dry mix and fruit into a mixing bowl and mix together by hand to form a dough. Turn dough out onto a table, knead a couple of times using dusting flour as required. Roll out to 2cm thick. Cut using a 7cm scone cutter. Place on flat tray lined with silicone paper and brush with egg or milk. (Can be chilled and baked off as required over 24 hour period if protected from skinning). In a fan assisted oven bake at 170°C for 16 minutes. Recipe yields 20 x 90g scones.
