Machine Mixing: using a planetary mixer with beater arm, place mix and water in bowl. Mix for 1 min on slow speed. Stop mixer and scrape down. Then mix for a further minute on medium speed. Hand mixing: place mix in a mixing bowl and add water. Using a plastic spatula mix by hand slowly to form a batter. Beat the batter rapidly until all lumps of powder have gone a smooth batter is attained. Deposit 120g per muffin in tulip muffin cases. In a fan assisted oven (e.g Eurofour) bake at 170oC for 20 minutes or until baked.
