Machine Mixing Place blend and water into a planetary mixer. Using the beater tools mix until water is absorbed followed by one min on slow speed. Then mix for 1.5 minutes on medium speed. Hand mixing Place blend and water in mixing bowl. Using a plastic spatula mix by hand until a lump free dough is formed. Shaping Weigh into 700g pieces and ball up. Use dusting flour as required. Flatten as per normal procedure, place on lined baking tray and cut through with cross design. Bake : In a fan assisted oven (ie Eurofour) bake at 180oC for 30 minutes. In an electric bakers deck oven, bake at 230oC for 25 minutes.
